
Zone-Balanced Chicken and Peas (3 Blocks)
This hearty, traditional dish is perfectly balanced for the Zone Diet.
Ingredients
- Protein (3 Blocks):
- 84g Chicken Thigh (raw weight)
- Carbohydrates (3 Blocks):
- 150g Peas
- 165g Tomatoes (diced)
- 33g Carrots (diced)
- 30g Onion (finely chopped)
- 7g Einkorn Flour (for thickening)
- Fats (3 Blocks):
- 1 tsp Olive Oil
Instructions
- Prep: Heat the olive oil in a skillet or Dutch oven over medium heat. Sautรฉ the onion and carrots until softened (about 5 minutes).
- Sear: Season the chicken thigh with salt and pepper. Add it to the pan and sear on both sides until golden brown.
- Simmer: Add the tomatoes (and a splash of water if needed) to cover the chicken. Reduce heat to low, cover, and simmer for 25-30 minutes, or until the chicken is cooked through.
- Finish: Stir in the peas and the Einkorn flour (to thicken the sauce). Cook for another 5-7 minutes, until the peas are tender and the sauce has thickened. Adjust seasoning as needed.
