๐Ÿซ Blueberry Roll (Healthy High-Protein Version)

Ingredients (Base):

  • 2 eggs
  • 140 g egg whites
  • 67 g oat flour
  • Stevia (to taste)

Ingredients (Filling):

  • 112 g quark
  • 8 g protein powder
  • 120 g blueberries
  • 12 g honey
  • 21 g hazelnut tahini (or nut butter)
  • 15 g coconut flakes

Instructions:

  1. Mix eggs, egg whites, oat flour, and stevia into a smooth batter.
  2. Bake thinly on a tray at 180ยฐC for ~10โ€“12 minutes (until flexible).
  3. While still warm, roll the base gently into shape.
  4. Mix all filling ingredients together.
  5. Unroll, spread filling evenly, then roll back up.
  6. Chill for at least 1 hour before slicing.
